Well as I babbled yesterday I will be short today. So I will be starting in the morning the journey of low carbing! Yay! I think I will start early... if I wake up... with having some eggs with peppers and onions. Topped with cheese and ketchup cause I love my ketchup and toast!!

Then lunch will be Steamed veg of choice leftover pork with butter and garlic. Pretty bland but you can kick it up by stirfrying the veg in garlic ginger and peanut oil. Add ginger and/or chili if you like a kick! The pork was cooked with a light coating of hoisin sauce for flavor and I just used pork tenderloin. Nice munchie!

Dinner will be Pasta, yes pasta, with 4 cheese and tomato sauce. I am using jarred but in the case of pasta sauce it usually doesn't have much but the normal ingredients. If you use preprepared things just check the label. I look for pasta sauce that is 5 grams of carbs or less for 1/2 cup or close to it. The more the better but watch out for added sugars and sodium.

Now I think this is a great time to tell you guys about some products on the market that are low carb and good. They taste good and are not to killer on crap to fill the product with. Obviously I said Pasta and I know everyone is going 'I thought you were doing low carb that's like killer on a whole week of carbs'. Well yes if you don't use the right pasta. I have tried many pasta substitues and trust me nothing substitutes pasta but pasta. There are a few products out there that are fine if you are just looking for bulk with a different texture but don't mine it being different than pasta. First and you will see it in books and sites, is spagettii squash the neutrition is as follows 1/2 cup is 5 grams carbs, 1 gram dietary Fiber which equals 4 grams of carbs. This is good. And for those who like squash it is a good replacement and available at the local grocery stores pretty much all year round. Another is Shiritaki noodles. These are made from yam or tofu. They come packaged in liquid that needs to be rinced off. Shiritaki noodles are kind of like hard jello. I find they have a flavor some people find they don't so I really suggest trying them as only you can tell if you like them or not. They are fully cooked so running them under hot water is more than enough. Play around using them in the same manor as any other noodle and they can be anywhere from 1-2 grams per package. Nothing to sneeze at right. >o<.

Then there is the best pasta ever. Dreamfields Pasta. It is pasta but with a twist. I can sit here all day and talk about them but I shall just give you a link to there site http://www.dreamfieldsfoods.com/ . Visit and read everything you need to know is there.  It has been talked about on Racheal Ray for diabetis month. That is exciting if you know who she is. I have been using this product since it has been on the market. I tried every low carb option available to me, and trust me I have had some OMG WTF moments wishing to remove the memory from my mouth tries. Let`s just say one should not have food that tasted of diesel fuel. Yuck! Dreamfields cooks just like pasta. Tastes like pasta. Has the veriety of pasta. And is pasta! Try it when you get the chance you won`t regret it. It`s only 5 grams of carbs per serving!

For my days on induction I am going to have between 20-30 grams of carbs taking into account that we are counting Net Carbs. For those who do not know how to figure out net carbs or even what they are, here you go a 101 in net carbs.

Net carbs are carbs with fiber and surgar alchohols removed. It has been shown that these two `Carbs` don`t have as high of an impact on your gluclose levels as originally thought. So especially for those who are diabetic, your gluclose levels have to be good or you will have a multitude of complications. Now for those who do or are going to low carb and those who are diabetic this is great news as we can now have a larger array of foods previously kept on the no-no list. To calculate take a look at the neutrition list on the package. Under Carbohydrates it will usually list the break down of the types of carbs in the product. Fiber, Sugar, Sugar Alchohols, including Maltatol. Now Sugar is sugar the rest of them Fiber, Sugar Alchohols and Maltatol can be subtracted from the total carbs, for example. If Carbs are 23 grams and listed under is the following Fiber 8, Sugar 2, Sugar Alchohols 10 and Maltatol 2 You do the following. Total carbs 23-Fiber 8- Sugar Alchohols 10 -Maltatol 2 it equals = 3. That is what you count for Net Carbs. Some products will have Maltatol and some will not. I want to put a warning out there. Sugar Alchohols and Maltatol in large quantities have a laxitive effect some people more than others, so pay attention to your body. That bag of chocolates might only work out to 3 grams for the whole bag but trust me you will regret it. As with EVERYTHING moderation is the key. If you don`t deny yourself then you can`t crave it. But being smart about those endulgances is the key. YOU CAN HAVE IT! So don`t binge. That is what other diets say to do but limit you down till you are craving it till you die!

Now not to say that you won`t have cravings, you will oh boy you will, especially at the beginning. You will need will power. You should portion things out. I will talk about low carb portion control in another post but know that with any change you will want to go back to where you were. You are making a change and change is hard but change is good. If you are a BIG eater then smaller portions will do you well. If you are a snacker or small eater a more balanced 3 meal days are better. You`ll figure out what you need to do.

Now one last notation before I sign off for this post. If you have a few extra dollars spend it on products you are using to substitue something you have a hard time doing without. Like Breads, Pastas or sweets then buy larger cuts of meat and then lots of Veg. The reason I say meats before Veg is because you can find places with lettuce 3 for like $1-$3 and 3 cucumbers for $1 you can make up you veg quicker than meats. Those have a higher cost because of the care that goes into it. And replacement products like pasta are something that costs more but can streach farther and give you the satisfaction that your not missing out, giving you a chance to adjust without taking someones head off.

There is tons of stuff I know and wish to share with you but at this time it is going to take some time to compile. Please leave questions as I can see what the main question is and respond with a post.  I will in the next couple posts give a listing of places to shop and go for foods and another on how to break down a balanced day. I will also list snacks here and there as I find I need them so watch for them. It can be a desert or a bowel of nibbles for those late gaming nights. I will also try and remember to take pictures of what I am buying or cooking for the voyers out there and I will start up a FB page and start making play lists of favorite music and low carb vids on Youtube.com. I will also let you know what I am doing for excersize and how I am trying that`s trying to sort my days. Right now it is chaos but from chaos comes order or so I keep tellng myself.
